Sausage & Pasta Soup
INGREDIENTS
• 1 lb Italian sausage (mild or spicy)
• 1 tbsp olive oil
• 1 medium onion, diced
• 2 cloves garlic, minced
• 1 medium zucchini, diced
• 1 bell pepper, diced
• 1 (14.5 oz) can diced tomatoes (with juice)
• 4 cups vegetable broth
• 1 tsp dried oregano
• 1 tsp dried basil (or fresh, chopped)
• Salt and pepper to taste
• 1½ cups uncooked pasta (e.g., ditalini or shells)
• 1 cup spinach, chopped
Directions
1. Cook Sausage: Heat olive oil in a large pot over medium heat. Add sausage (removed from casing if needed) and brown, breaking into crumbles.
2. Sauté Vegetables: Add onion, zucchini, and bell pepper. Cook for 5 minutes until softened. Add garlic and cook 1 minute.
3. Make the Broth: Stir in diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
4. Add Pasta: Add uncooked pasta to the pot and simmer for 8-10 minutes, stirring occasionally, until pasta is al dente.
5. Finish with Spinach: Stir in spinach during the last 2-3 minutes of cooking. Adjust seasoning if needed.
6. Serve: Ladle soup into bowls and garnish with fresh basil and parmesan.
