The 2020 Apothic Red is our first daringly original blend of California-grown red grapes. Zinfandel leads the blend with silky layers of blackberry, black cherry with a hint of black pepper. Syrah and Merlot deliver undercurrents of ripe blueberry, boysenberry and a soft, plush mouthfeel. Cabernet Sauvignon adds more dimension with notes of black currant while bold tannins deliver a hint of intrigue. The finish is long and smooth with lingering notes of vanilla and mocha from the oak we selected for aging. <br><br> <b>Viticulture Notes:</b><br> We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> The grapes were de-stemmed before some whole-cluster fermentation. We fermented the 2020 Apothic Red in a combination of cone-sweep and upright tanks ranging from 4 to 6 days at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control and managed heat spikes through fermentation where needed to maximize the extraction of color and dark fruit notes.

Our 2020 Apothic Merlot is a silky, approachable red wine grown in California. Notes of blackberry and boysenberry are underscored by hints of toasted oak and shaved chocolate. A touch of Teroldego enhances the Merlot’s untamed character with layers of wild blueberry and split fig. The fruit melds together seamlessly in plush tannins that pull straight through to the long finish. <br><br> <b>Viticulture Notes:</b><br> The majority of the Merlot and Teroldego for this wine was sourced from the Lodi region of Central California. <br><br> <b>Winemaking Notes:</b><br> We selected Merlot grapes for their dark fruit intensity and generous tannins to create a velvety mouthfeel. Portions of this wine were oak-aged for 3-4 months to preserve elegant fruit characteristics.

Apothic Crimson’s long, captivating finish leaves you open to possibilities and wondering what’s next. <br><br> <b>Viticulture Notes:</b><br> Apothic Crimson was harvested over the 2019 and 2020 to allow for artful blending and aging. We carefully selected vineyards that are known for producing fruit with generous plush tannins and luscious fruit character. To capture optimal acidity and vivid fruit character, we harvested at peak ripeness. The 2020 growing season was cool and mild with a heat spike that pushed an earlier harvest, while 2019 experienced more rain. While harvests of both vintages produced slightly lower yields, the quality was exceptional with vibrant acidity and deft balance. <br><br> <b>Winemaking Notes:</b><br> The grapes were de-stemmed before some whole-cluster fermentation. The grapes were then fermented in a combination of cone-sweep and upright tanks for 3-5 days at a temperature averaging 80-85°F. Across all lots, we exercised meticulous temperature control through fermentation to finesse a gentle extraction of color and lighter red fruit flavors. Apothic Crimson was aged on mocha-toned oak to enhance those characteristics and enrich the wine’s elegant appeal.

Our 2020 Apothic Pinot Noir is a bold, yet lighter-bodied, red wine. Bright layers of crushed raspberry and ripe cherry meet aromas of Tahitian vanilla. The mouthfeel is round and opulent, leading to a detailed, lingering finish. <br><br> <b>Viticulture Notes:</b><br> California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 grapes show vibrant acidity and concentrated flavor. <br><br> <b>Winemaking Notes:</b><br> We selected Pinot Noir grapes from Lodi for their red fruit profiles and soft, approachable tannins. Syrah was blended with the Pinot Noir to complement the dark cherry flavors with soft blueberry notes. To brighten the acidity and add notes of red currant, we blended unique Graciano grapes into the wine. The grapes were destemmed with marginal crushing and cold soaked overnight to encourage extraction of the fruit’s alluring color and tannins.

Our 2019 Apothic Dark brings daring depths of dark fruit together for a bold red blend. Rich layers of blackberry and bold tannins lead the blend from the Petite Sirah, followed by notes of boysenberry pie, black cherry and plush tannins from the Teroldego. Bright, tart accents of pomegranate and dusts of spice add dimension while Zinfandel brings in a touch of licorice. The Zinfandel and Cabernet Sauvignon balance the dark fruit with some red and black currant characters, and both impart a more balanced, plush mouthfeel. <br><br> <b>Viticulture Notes:</b><br> The majority of the grapes for our Apothic Dark originated from the Lodi, California, region. The 2019 growing season in experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2019 in California shows vibrant acidity and concentrated flavor. <br><br> <b>Winemaking Notes:</b><br> We harvested the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit. We fermented these selected varieties between 86° to 88°F. In this vintage, we added a touch of Zinfandel to help balance the fruit perception and Cabernet to round out the structure with a fuller body. To create a silky mouthfeel and hints of dark chocolate and spice, we aged the blend in a mixture of French and American oak.
