Baked Stuffed Mini Peppers

INGREDIENTS

• 1 1/2 pounds mini bell peppers and jalapeños

• 12 ounces garlic and herb seasoned goat cheese

Directions

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. Slice the mini peppers in half lengthwise and remove the seeds. Arrange them cut-side-up on the baking sheet.

3. Spoon the garlic and herb goat cheese into the center of each pepper half.

4. Bake for 10 minutes, until peppers are tender and cheese is warm.

5. Serve warm and enjoy!
